Single sugars combine when dehydrated by removing one H2O to give a two sugar, di-sacarrhide
sucrose, 1 glucose + 1 fructose
lactose, 1 glucose + 1 galactose [milk sugar, needs the friendly bacteria lacto-bacilli to digest the di into the single mono's.
